Quick Beef and Broccoli Recipe for Busy Weeknights

Ingredients
  

  • 1/2 lb beef flank steak sliced thinly across the grain
  • 1 lb fresh broccoli broken into florets
  • 1 tablespoon light soy sauce
  • 1 tablespoon cornstarch or tapioca starch
  • 4 tablespoons peanut oil divided
  • 2 garlic cloves crushed
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon sesame oil
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon sambal oelek

Method
 

  1. In a bowl, mix the soy sauce, cornstarch, black pepper, sambal oelek, and sesame oil.
  2. Add the sliced beef and toss to coat evenly.
  3. Let marinate for 15 minutes.
  4. Heat a wok over high heat until very hot.
  5. Add 2 tablespoons peanut oil.
  6. Add the broccoli and salt, stir briefly, then add the water.
  7. Cover and steam on high heat for 3 to 4 minutes.
  8. Remove the broccoli and any liquid to a bowl.
  9. Reheat the wok over high heat and add the remaining 2 tablespoons peanut oil.
  10. Add the crushed garlic and stir-fry for about 1 minute until lightly browned.
  11. Add the marinated beef and stir-fry vigorously until the meat changes color, about 1 minute.
  12. Return the broccoli and reserved liquid to the wok.
  13. Toss everything together for 30 seconds until heated through and lightly sauced.
  14. Serve immediately.
