White Chocolate and Apricot Log recipe

200 g white chocolate melts
1/4 cup cream
20 g butter
1 cup Rice Bubbles
1/2 cup coconut
50 g dried apricots diced
1 tbs icing sugar *to serve
Melt chocolate, butter and cream in the microwave until smooth. Stir regularly.
Add Rice Bubbles, coconut and apricots. Mix well. Chill.
Roll mixture into 3 logs. Wrap in baking paper and chill until solid.
Remove from fridge. If desired roll in icing sugar and slice into 1 cm thick slices.
