2 fluid ounce White Mezcal
2 fluid ounce Cointreau
2 Lime

1/2 cup Granulated Sugar
1 cup Water
Make the beet syrup by combining the Granulated Sugar (1/2 cup) and Water (1 cup) in a pot over medium-high heat. Stir until sugar is dissolved. Add Beet (1) and let simmer for 10-15 minutes.
Combine 2 fl oz of beet syrup, juice of 2 Lime (2), Cointreau (2 fluid ounce), and White Mezcal (2 fluid ounce) in a shaker. Fill with ice and shake for about 15 seconds.
Salt the rim of your glass and fill it with Ice (as needed).
Pour margarita over ice and garnish with lime slices.
