 2 cups cooked black rice (at room temperature)
 1/2 red bell pepper (cut to 1/2" dice)
 1/2 yellow bell pepper (cut to 1/2" dice)
 4 green onions (thinly sliced)
 1 large tomato (seeded and cut into 1/2" dice)
 1 cup fresh mozzarella (cut to 1/2" dice)
 2 cups kale leaves (tough stems removed, finely chopped)
 1/4 cup fresh basil leaves (thinly sliced)
 2 tablespoons fresh mint leaves (thinly sliced)
 1 lemon (zested and juiced)
 1 teaspoon dijon mustard
 4 tablespoons olive oil
 1/2 teaspoon kosher salt
 1/4 teaspoon black pepper
 1 large clove garlic (minced)

Steps:

1. Make the rice salad
2. Combine the rice, bell peppers, onion, tomato, mozzarella and kale into a large bowl. Set aside.
3. Make the vinaigrette
4. In a small bowl, whisk together the lemon zest, juice, dijon mustard, olive oil, salt, pepper and garlic until emulsified.
5. Assemble the salad
6. Add the basil, mint and dressing to the salad and toss well to combine. Serve.

 1 cup forbidden black rice
 6 cups water
 generous pinch salt
 1 cup forbidden black rice, rinsed
 1 cup water
 pinch salt
 2 tablespoons olive oil ( or butter)
 1 shallot – chopped
 1 1/2 cups forbidden black rice
 1 Tablespoon fresh thyme ( or 1 teaspoon dry)
 2 1/2 cups plus 1 tablespoon broth or stock ( veggie or chicken)
 1 teaspoon granulated garlic powder
 1 bay leaf
 pinch salt and pepper
 1/3 cup slivered almonds ( save 2 tablespoons for garnish)
 Garnish: 1-2 tablespoons Italian parsley

1. Stove Top Method
2. Bring water and rice to a boil, let simmer uncovered until tender about 20-25 mintues. Drain and fluff. Season!
Instant Pot:
3. Place equal parts water and black rice in the instant pot. Add a pinch of salt. Set pressure to 18 minutes on high. Let naturally release for at least 10 minutes.
4. Black Rice Pilaf
5. heat oil in a 10-inch skillet over medium heat and add the shallots, stirring until golden and fragrant, about 4 -5 minutes. Add rice and thyme and saute 3-4 minutes. Add stock, garlic, bay leaf, salt and pepper and 1/2 the almonds. Bring to a simmer, stirring. Cover, turn heat to low and cook 25-30 minutes or until all the liquid has evaporated and rice is tender. Garnish with remaining almonds and parsley.

 1 Tomato
 1 Fresh Mozzarella Cheese Ball
 2 cup Kale

Steps:

1. Place the Black Rice (2 cup) into a bowl and set aside.
2. Dice the Red Bell Pepper (1/2) and the Yellow Bell Pepper (1/2) into 1/2" pieces. Thinly slice the Scallion (4).
3. Finely chop the Kale (2 cup).
4. Cut the Fresh Mozzarella Cheese Ball (1) into 1/2" pieces.
5. Dice the Tomato (1) into 1/2" pieces. Combine the rice, bell peppers, onion, tomato, mozzarella and kale into a large bowl. Set aside.
6. In a small bowl, zest the Lemon (1) and juice it. Mince the Garlic (1 clove). Then add Dijon Mustard (1 teaspoon), Olive Oil (4 tablespoon), Kosher Salt (1/2 teaspoon) and ground Ground Black Pepper (1/4 teaspoon). Whisk together until emulsified.
7. Thinly slice the Fresh Basil Leaf (1/4 cup) and the Fresh Mint Leaves (2 tablespoon). Add the basil, mint and dressing to the salad and toss well to combine. Serve.

 1 cup black rice
 2 cups water (chicken stock or vegetable broth would also work)
 1/2 teaspoon kosher salt
 1 cup black rice
 6 cups water
 1/2 teaspoon kosher salt
 2 tablespoons of olive oil
 1 small onion (chopped)
 2 small carrots (cut into small pieces approximately ½ cup)
 2 stalks of celery (cut into small pieces approximately ½ cup)
 1 clove of garlic
 ½ cup dried cranberries or raisins (roughly chopped)
 1 cup black rice
 1 ¾ cups liquid (water or stock)
 ½ cup pecans (chopped)

Steps:

1. For cooking it like rice (aka the Absorption method)
2. Place black rice, water, and kosher salt in a medium saucepan or Dutch oven with a tight fitting lid over medium-high heat.
3. Bring to a boil, put the lid on, turn the heat down to low, and let it summer for about 30-33 minutes or until all the liquid is absorbed.
4. Remove it from heat (keep the lid on) and let it rest for 10 minutes. Fluff it with a fork.
5. For The Pasta Method:
6. Place water, black rice, and kosher salt in a medium saucepan or dutch oven.
7. Bring it to a boil and let it simmer (stirring occasionally) for 20 minutes or until the rice is fully softened.
8. Drain the liquid using a colander as soon as it cooks and serve.
9. For Black Rice Pilaf:
10. Cook the vegetables: Heat vegetable oil in a medium saucepan with a lid over medium-high heat. Add in onion, carrots, celery and saute for 5 minutes or until softened. Add in garlic, fresh thyme leaves, a handful of dried cranberries and saute for 30 seconds.
11. Add the black rice and cooking liquid: Add a cup of black rice and 1 ¾ cups of water (chicken stock or vegetable broth) salt and pepper. Bring to a boil, turn the heat down to medium-low and simmer for 30 minutes or until all the liquid is absorbed.
12. If you prefer, top it off with chopped pecans/walnuts and garnish with fresh thyme leaves. Serve.

 1 cup black rice
 4-5 cups of hot water (vegetable stock is even better)
 3 tsp olive oil
 3 medium onions, (one chopped and the other two thinly sliced)
 1 tsp minced garlic
 1/4 cup of white wine, (optional)
 12 button mushrooms, (sliced)
 1 tsp red pepper flakes
 Salt and ground black pepper to taste
 1 tsp sugar
 1/2 cup cashews
 2 tbsp white miso paste, (optional)

Steps:

1. Make the cashew cheese for the risotto by blending together the cashews and the miso with enough water to make a smooth paste. If you don't have miso you could use 2 tbsp nutritional yeast, or leave it out altogether and just use the cashew paste.
2. Heat 1 tsp of oil in a saucepan.
3. Add the chopped onion, season with some salt, red pepper flakes and ground black pepper and saute until softened, about three to four minutes.
4. Add the garlic, saute for a few seconds, then add the mushrooms and white wine.
5. Turn up the flame to medium-high and cook until the wine has evaporated and the mushrooms have taken on a nice sheen.
6. Add the black rice, season with more salt and pepper to taste, and saute for a minute. Now add 1/2 cup of water and let it cook until the water evaporates, stirring frequently. Just before the rice dries completely, add another 1/2 cup of water. Repeat, stirring the risotto frequently, until the rice is cooked but still has a bite to it. This process takes some time, so be patient.
7. Now add the cashew cheese and mix well. The risotto should have a creamy, slightly soupy consistency when done. Add more salt if needed.
8. Now heat the remaining 2 tsp of oil in another saucepan, add the sliced onions and sugar with a pinch of salt, and saute, stirring frequently, until the onions turn golden brown.
9. Top the risotto with the caramelized onions and serve hot.
