1. Salmon on the Blackstone Griddle

 1/4 cup soy sauce (or gluten-free tamari)
 1/4 cup oil (like avocado oil)
 2 tablespoons brown sugar
 1 teaspoon dried basil
 1 teaspoon dried thyme
 1 teaspoon garlic powder.
 1/4 teaspoon sea salt
 1/4 teaspoon fresh ground black pepper
 16 ounces salmon filets
 Oil (for the griddle)
 For serving: Freshly squeezed lemon juice

Steps:

1. In a medium bowl, whisk together the soy sauce, avocado oil, brown sugar, basil, thyme, garlic powder, salt, and pepper.
2. Place the fish in a zip-top bag or shallow dish and pour the marinade over it.
3. Refrigerate for 1 hour.
4. Blackstone Griddle
5. Preheat the Blackstone griddle to medium-low to low heat (about 350° F).
6. Liberally coat the griddle with oil.
7. Add the fish, with the skin side of the salmon down if it has skin.
8. Cook for about 2 minutes per side for medium-rare, or until desired doneness. (Actual cook time will depend on the size and thickness of the salmon.)
9. Drizzle with freshly squeezed lemon juice and serve.

11. Heat a heavy skillet over medium heat and coat with oil.
12. Add the fish to the skillet, salmon skin side down.
13. Cook the fish for a total cooking time of about 4 to 5 minutes, flipping halfway through. Use an instant read thermometer to make sure that the center of the flesh has reached the desired doneness.

 2 pounds shrimp
 Kebab Sticks
 4 tablespoons unsalted butter
 Salt & Pepper To Taste
 Seasonings Optional

Steps:

1. Make your kebabs by threading the shrimp through the stick.
2. Start by turning on your Blackstone Griddle to HIgh. Let heat for about 5 minutes.
3. Add the butter to the griddle, allow for it to melt.
4. Add your shrimp, and season with salt, pepper, and seasonings.
5. After about 3 minutes, flip your shrimp and then cook for another 3-4 minutes until fully cooked.
6. Remove when fully cooked.
7. Plate, serve, and enjoy!

 1 pound scallops
 1 pound jumbo shrimp (peeled and deveined)
 1 pat butter
 1 tablespoon lemon pepper
 1 tablespoon all-purpose bbq rub

Steps:

1. Preheat your Blackstone Griddle to medium-high heat, about 400F
2. Pat both the scallops and shrimp dry with multiple layers of paper towels
3. Melt the butter on the griddle
4. Place the shrimp in the butter and begin to cook
5. Place the scallops on the griddle
6. Season the scallops with the BBQ seasoning
7. Season the shrimp with the lemon pepper
8. After cooking each for 2 minutes, flip the shrimp then flip the scallops
9. Cook for 2 more minutes
10. Remove the scallops
11. Check the shrimp to see if they have lost all gray color and opaqueness. If the shrimp are still slightly opaque, cook an additional minute until done
12. Serve immediately

Steps:

1. Preheat Flat Top griddle to the lowest setting. Do not use any wind guards.
2. Gather all of your ingredients to make this recipe.
3. Separate the egg whites from the yolks and place into different containers.
4. With a hand mixer, whip the egg white until a stiff peak forms for about 1 1/2 minute. Do not over mix!!
5. On a preheated griddle, place a sheet of parchment paper to the flat top.
6. Add all the fluffy egg white onto the parchment paper in a mound.
7. Then, make a slight hole in the center of the whites to make a nest shape.
8. Sprinkle the parmesan cheese and seasoning of your choice to the top of the egg white.
9. Cover with a dome lid and cook for 2 minutes.
10. Uncover and place the egg yolk into the center of the fluffy egg white.
11. Replace the dome lid cover and cook for 2 more minutes or until the whites are starting to turn golden brown and the yolk is set.
12. With a spatula, remove the cloud egg to a serving platter.
13. Serve right away.

 4 catfish fillets
 1 1/2 Tbsps flour (leave out if dong Keto/ low carb)
 1 1/2 Tbsps Cajun seasoning
 cooking oil of choice or butter
 1 pound asparagus (bottom inch or two cut off)
 Optional: spicy mayo, lemon wedges

Steps:

1. Pat the catfish fillets dry with paper towels. Sprinkle the flour on both sides and rub the flour to a thin, even layer. Season both sides with most of the Cajun seasoning (save some for the asparagus).
2. Preheat the griddle to medium heat for several minutes. Once hot add some cooking oil or butter and the seasoned catfish and asparagus. Sprinkle some Cajun seasoning on the asparagus as it hits the griddle.
3. Cook 8 to 10 minutes total, flipping the catfish halfway through and turning the asparagus a few times. The asparagus may be done before the catfish, if so remove before the fish.
4. Serve with spicy mayo and/or lemon wedges if desired.

 16 oz Raw Shrimp (peeled and deveined)
 4 Tbsp Butter
 1 Tbsp Minced Garlic
 1/4 tsp Salt
 1/4 tsp Pepper
 1 Lemon (juiced)

Steps:

1. Preheat the Blackstone Griddle to medium high heat (350-400 degrees F). Melt approximately 1 Tbsp of the butter on the griddle. Then place the shrimp directly on the griddle in the melted butter.
2. Sauté the shrimp for 2-3 minutes per side until the shrimp is pink (only flip the shrimp once). Move the shrimp to make an opening on the griddle in the center of the shrimp. Place the remaining butter, minced garlic, salt and pepper in this opening on the griddle. Then toss the shrimp in this mixture for 1 minute until the garlic is aromatic.
3. Remove the shrimp from the grill, top with the lemon juice and it's ready to enjoy.
